Dragonfly Chuck Roast Crock Pot Recipe

While we do love rib steaks, and eat plenty of burgers and meatloaf, the chuck roast is one of our all time favorite cuts. Slow cooked in a crock pot, this roast can be so tender and flavorful. Chuck roasts can also be smoked and cooked for a beef BBQ.

Here’s a simple recipe for a wonderful dinner.

Ingredients  

  • beef chuck roast 2-3 pounds

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 teaspoon parsley

  • 1 clove diced garlic

  • 3 onions cut into quarters

  • 4-6 potatoes cut in half or quartered

  • 2-3 carrots or other root vegetables cut into chunks

  • 1 cup of beef broth or water

Instructions 

  1. Sprinkle the roast with the salt, pepper, parsley and garlic.  

  2. Brown both sides of the roast in a skillet with a tablespoon of olive oil

  3. Place the sliced onion into the bottom of the crock pot.

  4. Add broth or water.

  5. Place the browned roast on top of the onions.

  6. Add the potatoes to the crock pot.

  7. Set the crock pot to low and cook for 8-10 hours, or on high for 4-5 hours, or until done.

  8. One hour before the roast is finished, add the carrots

  9. Once the roast and vegetables are done, remove the roast and set it aside to rest.

  10. Remove the vegetables from the crock pot and place them on a serving platter.

  11. Slice or shred the roast and serve with the potatoes and vegetables.

  12. Enjoy!
